COWOOD CHIPS, also known in the winemaking industry as oak chips, can be added to wine at various stages of production, preferably during the maturation or aging phase. When used during these stages, they can provide the following benefits:
- Aromatic contribution – Depending on the type of oak used and the level of toasting, oak chips can impart aromas of vanilla, coconut and chocolate (typically associated with American oak), or toasted notes, bread crust and spicy nuances (more characteristic of French oak).
- Ellagitannin contribution – Oak chips release ellagitannins that enhance the wine's structure, complexity and overall mouthfeel.
EcoWood Chips are available either in the traditional oak chip form (untoasted, medium toast or medium-plus toast) or in a granulated form, with the same toasting options available.
