OENO DAP PLUS is an essential fermentation activator designed to ensure the proper development of both primary fermentations and secondary fermentations carried out in autoclaves or bottles.
Ammoniacal nitrogen is the most readily assimilable nitrogen source for yeast. Its addition helps compensate for potential deficiencies in yeast assimilable nitrogen (YAN) within the must, whether caused by environmental conditions, winemaking practices or the characteristics of the grape variety.
Thiamine hydrochloride (Vitamin B1) positively influences yeast metabolism and growth, while helping to limit the formation of acetaldehyde and keto acids, compounds that tend to bind with sulfur dioxide and reduce its effectiveness.
RECOMMENDED DOSAGE
Musts: 15–20 g/hL.
Highly clarified musts with insufficient yeast assimilable nitrogen: 30 g/hL.
Before determining the appropriate dosage, it is recommended to measure the yeast assimilable nitrogen (YAN) content of the must. An addition of 30 g/hL of Oeno DAP Plus provides approximately 76 mg/L of assimilable nitrogen.
A dosage of 30 g/hL corresponds to the current maximum limit established by EU Regulation (EC) No. 606/2009 for thiamine hydrochloride.
